Hill Country Heat Corn Bread Muffins

Cook Time: 20 minutes

Total Time:  30 minutes

Yield:  6 muffins

 

Ingredients: 

 

1 Box Lambs Sweet Corn Bread Mix (or your favorite Corn Bread Mix)

 

1 Cup of Milk

 

1/3 Cup of Oil

 

1 Egg, slightly beaten

 

2 Tbsp. Brushfire Farms Peach Peach Pepper Jam

 

1 ½ Cups Tillamook Medium Sharp Cheddar Cheese (grated)

 

1 Large Pickled Jalapeño, sliced in circles

 

Spray Pam (or something similar)

 

Process: 

 

Step 1:  Combine Corn Bread Mix, Milk, Oil, Egg in bowl and whisk together.  Then add Jam and 1 Cup Cheddar Cheese and whisk together. 

 

Step 2:  In greased muffin pan, fill molds halfway with mixture, then top with a little more cheese and place a ring of pickled jalapeño on top. 

 

Step 3:  Bake at 400 degrees (roughly 20 minutes) or until golden brown.  Remove from pan, serve with our Peach Pepper Jam and enjoy!
